Description

This Air Fryer Sweet Chili Chicken and Brussels Sprouts is a perfect high-protein, low-effort meal thatโ€™s packed with flavor! The chicken is coated in a sweet and spicy chili sauce while the Brussels sprouts become crispy in the air fryer. Itโ€™s the perfect dish for high-protein meal prep, a quick dinner, or a satisfying lunch!


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb/450g)
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon honey (optional, for extra sweetness)
  • 2 cups Brussels sprouts, trimmed and halved
  • Salt and pepper to taste

Instructions

  • Preheat your air fryer to 375ยฐF (190ยฐC).
  • In a small bowl, mix together the olive oil, soy sauce, sweet chili sauce, rice vinegar, garlic powder, ginger, and honey (if using).
  • Season the chicken breasts with salt and pepper, then coat them with the sweet chili mixture, making sure they are evenly covered.
  • Place the chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the internal temperature reaches 165ยฐF (74ยฐC).
  • While the chicken is cooking, season the Brussels sprouts with olive oil, salt, and pepper, then place them in the air fryer basket as well. Cook for 8-10 minutes, shaking halfway through, until they are crispy and golden brown.
  • Once the chicken is done, let it rest for a few minutes before slicing.
  • Serve the sliced chicken with the crispy Brussels sprouts. Drizzle with any remaining sweet chili sauce from the air fryer basket if desired.

Notes

  • You can make extra sweet chili sauce and drizzle it over the dish for added flavor.
  • This recipe works well with chicken thighs or even pork tenderloin instead of chicken breasts.
  • You can customize the level of sweetness and spice by adjusting the amount of sweet chili sauce or adding more honey.
