- 1 lb large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup shredded sweetened coconut
- 1 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon olive oil spray (for air fryer)
- 1 tablespoon fresh lime juice (optional, for serving)
- Sweet chili sauce (for dipping, optional)
Instructions
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Set up a breading station: In one shallow bowl, place the flour. In a second shallow bowl, whisk the eggs. In a third shallow bowl, combine the shredded coconut, panko breadcrumbs, salt, pepper, garlic powder, and paprika.
- Dip each shrimp into the flour, then the egg mixture, and finally coat with the coconut-breadcrumb mixture, pressing gently to ensure a good coating.
- Spray the air fryer basket with olive oil spray. Arrange the shrimp in a single layer in the basket, making sure they aren’t overcrowded. You may need to work in batches depending on the size of your air fryer.
- Air fry the shrimp at 400°F (200°C) for 6-8 minutes, flipping halfway through, until they are golden brown and crispy.
- Serve the coconut shrimp hot, with a squeeze of fresh lime juice and sweet chili sauce for dipping, if desired.
Notes
- For extra crunch, you can add a tablespoon of cornmeal to the coconut and breadcrumb mixture.
- If you prefer a lighter shrimp, you can use unsweetened coconut flakes.
- Air frying times may vary depending on the size of your shrimp and air fryer model. Keep an eye on the shrimp as they cook to prevent overcooking.
