Description

Air Fryer Coconut Shrimp are perfectly crispy on the outside, with a tender and juicy shrimp inside. Coated in a sweet coconut and breadcrumb mixture, these shrimp are light, crunchy, and full of flavor, all without the added oil of traditional frying.

  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup shredded sweetened coconut
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil spray (for air fryer)
  • 1 tablespoon fresh lime juice (optional, for serving)
  • Sweet chili sauce (for dipping, optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. Set up a breading station: In one shallow bowl, place the flour. In a second shallow bowl, whisk the eggs. In a third shallow bowl, combine the shredded coconut, panko breadcrumbs, salt, pepper, garlic powder, and paprika.
  3. Dip each shrimp into the flour, then the egg mixture, and finally coat with the coconut-breadcrumb mixture, pressing gently to ensure a good coating.
  4. Spray the air fryer basket with olive oil spray. Arrange the shrimp in a single layer in the basket, making sure they aren’t overcrowded. You may need to work in batches depending on the size of your air fryer.
  5. Air fry the shrimp at 400°F (200°C) for 6-8 minutes, flipping halfway through, until they are golden brown and crispy.
  6. Serve the coconut shrimp hot, with a squeeze of fresh lime juice and sweet chili sauce for dipping, if desired.

Notes

  • For extra crunch, you can add a tablespoon of cornmeal to the coconut and breadcrumb mixture.
  • If you prefer a lighter shrimp, you can use unsweetened coconut flakes.
