For the Cake:
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1/2 cup 7UP soda
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons 7UP soda
- 1 teaspoon lemon juice (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan or tube pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the 7UP soda, vanilla extract, and lemon extract. Mix until just combined.
- Pour the batter into the prepared bundt pan.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, 7UP soda, and lemon juice until smooth. Adjust the consistency by adding more soda or powdered sugar if needed.
- Drizzle the glaze over the cooled cake before serving.
Notes
- For a more pronounced citrus flavor, add a teaspoon of lemon zest to the batter or glaze.
- Ensure the cake is completely cool before glazing to prevent it from soaking in too much.
