Ingredients

Units Scale

For the Cake:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1/2 cup 7UP soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons 7UP soda
  • 1 teaspoon lemon juice (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 10-inch bundt pan or tube pan.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the 7UP soda, vanilla extract, and lemon extract. Mix until just combined.
  • Pour the batter into the prepared bundt pan.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  • In a small bowl, whisk together the powdered sugar, 7UP soda, and lemon juice until smooth. Adjust the consistency by adding more soda or powdered sugar if needed.
  • Drizzle the glaze over the cooled cake before serving.

Notes

  • For a more pronounced citrus flavor, add a teaspoon of lemon zest to the batter or glaze.
  • Ensure the cake is completely cool before glazing to prevent it from soaking in too much.
