Ingredients

1 jar (13 oz) strawberry, blackberry, or blueberry jam

3/4 cup lemon juice (or water)

2 tablespoons fruit pectin

2 tablespoons collagen (optional, for extra chewiness)

Granulated sugar, for coating (adjust to taste)
Instructions

In a saucepan, mix jam with lemon juice (or water).

Sprinkle in pectin and collagen, then whisk until smooth.

Heat the mixture over medium heat, bringing it to a gentle bubble. Cook for 12-15 minutes, stirring often, until it thickens into a smooth, syrupy consistency.

Pour into gummy bear molds or a parchment-lined 9ร9 baking dish.

Refrigerate for 2 hours, or until fully set.

Remove gummies from molds (or cut into squares if using a baking dish).
