- 2 bricks (16 ounces) neufchรขtel cheese, softened
- 2.5 cups canned artichokes, drained and roughly chopped
- 3 cups fresh spinach, chopped and packed
- 1/2 cup shallot, diced
- 1 cup plain Greek nonfat yogurt
- Optional: parmesan and/or mozzarella cheese for topping
Instructions
- Preheat your oven to 400ยฐF.
- Combine neufchรขtel cheese, artichokes, spinach, shallots, and Greek yogurt in a casserole dish.
- Bake for 15-18 minutes, then stir to combine.
- If desired, top with parmesan and/or mozzarella cheese and broil for the last 5 minutes for a cheesy, golden top.
- Serve and enjoy!
Notes
- Neufchรขtel cheese is a lighter version of cream cheese with less fat. If unavailable, you can use regular cream cheese as a substitute.
