Description
These Spinach Dip Rolls are a savory and cheesy snack, with a creamy spinach and artichoke filling wrapped in flaky puff pastry and topped with everything bagel seasoning. They’re the perfect appetizer or party snack!
Ingredients

1 lb. frozen spinach, thawed and drained

1 cup chopped marinated artichoke hearts (about 6 oz. drained)

1 cup shredded Parmesan

1/2 cup shredded Gruyère

1/2 cup shredded white cheddar

3 cloves garlic, grated or finely chopped
-
2 oz. cream cheese, room temperature
-
Zest of 1 lemon (optional)

1/2 tsp. crushed red pepper flakes
-
1/2 tsp. kosher salt

1 large egg
-
2 Tbsp. heavy cream

All-purpose flour, for dusting

1 (17-oz.) pkg. puff pastry, thawed

2 Tbsp. everything bagel seasoning or toasted sesame seeds
Instructions
Prepare the Filling

In a large bowl, combine spinach, artichokes, Parmesan, Gruyère, cheddar, garlic, cream cheese, lemon zest (if using), red pepper flakes, and salt. Mix well.
Prepare the Puff Pastry

In a small bowl, whisk together egg and heavy cream to make the egg wash.

On a lightly floured surface, roll both sheets of puff pastry into 10″ x 10″ squares. Cut each square in half to create 2 rectangles.

With the longer edge of a rectangle facing you, pierce the dough all over with a fork. Spoon one-quarter of the spinach mixture along the edge of the dough closest to you. Brush the far edge with egg wash.

Roll the dough tightly over the filling, crimping the edge with a fork to seal. Repeat with the remaining pastry and filling to create 4 logs.

Transfer the rolls to a parchment-lined baking sheet and freeze for 20 minutes.
Bake the Rolls

Preheat the oven to 425°. Slice each log into 4 pieces and place them on a baking sheet.

Brush each piece with the egg wash and top with everything bagel seasoning.

Bake for 25 minutes or until the dough is golden brown. Let cool slightly before serving.
Notes

You can make these rolls ahead of time and freeze them before baking for a quick snack when needed.
