Description

This 4-Ingredient Vegan Chocolate Mousse with Pistachios is a simple yet decadent dessert made with dark chocolate, pistachios, apples, and a touch of olive oil for richness. Itโ€™s a naturally sweet and creamy treat perfect for any occasion.

Ingredients

Units Scale
  • 1 pound (3 to 4) apples, peeled, cored, and diced
  • 1 cup roughly chopped pistachios
  • 1 cup (8 ounces) dark chocolate chips (at least 70% cacao)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. In a medium saucepan, cook the diced apples over medium heat, stirring occasionally, until they become soft and begin to break down, about 8-10 minutes.
  2. Meanwhile, melt the dark chocolate chips in a heatproof bowl over a double boiler or in the microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Add the olive oil to the melted chocolate and stir until well combined.
  4. Once the apples are soft, remove them from the heat and allow them to cool for a few minutes.
  5. Transfer the cooked apples to a blender or food processor and blend until smooth, adding a little bit of water if necessary to help blend.
  6. Mix the smooth apple puree with the melted chocolate and olive oil mixture, blending until completely combined.
  7. Chill the mousse in the refrigerator for at least 1-2 hours to set.
  8. Before serving, spoon the mousse into bowls or glasses and sprinkle with chopped pistachios for added crunch and flavor.

Notes

  • For a sweeter mousse, you can add a bit of maple syrup or agave nectar to taste.
  • If you prefer a smoother texture, feel free to strain the apple puree before mixing it with the chocolate.
  • Try using other nuts, like almonds or hazelnuts, for different flavors and textures.
  • Ensure the dark chocolate is at least 70% cacao for a rich, slightly bitter taste that balances well with the sweet apples.
