Scale
- For the Beef Filling:
- 1 1/2 pounds ground beef (or chicken or pork)
- Black pepper, to taste
- 4 cloves garlic, chopped
- 1โ2 tablespoons chili paste
- 1 tablespoon fresh grated ginger
- 1/3 cup chopped roasted peanuts
- 1/3 cup tamari or soy sauce
- 1โ2 cups shredded green cabbage
- 1/2 cup Thai basil, chopped
- 1/4 cup chopped green onions
- 2 cups cilantro, chopped
- 8โ10 flour tortillas, warmed
- 1/4 cup toasted sesame seeds
- For the Peanut Sauce:
- 1/2 cup roasted peanut oil
- 1/4 cup creamy peanut butter
- 2 tablespoons rice vinegar
- 2 tablespoons tamari or soy sauce
- 1 clove garlic, grated
- Chili flakes, to taste
Instructions
- Cook the Beef Filling: In a large skillet, cook the ground beef with black pepper over medium heat. Break up the meat as it cooks until browned, about 5 minutes. Add garlic, ginger, and chili paste. Cook for another minute. Add peanuts and tamari or soy sauce, then bring to a simmer. Cook until the sauce coats the beef, about 3-5 minutes. Stir in cabbage, basil, and green onions. Remove from heat.
- Warm the Tortillas: Place one tortilla at a time in the microwave for 15 seconds to warm. Spoon the beef mixture down the center of each tortilla, then top with fresh cilantro. Fold the tortilla over the filling, then fold the sides and ends of the tortilla, rolling forward to enclose the filling. Repeat with remaining ingredients.
- Make the Peanut Sauce: In a small bowl, whisk together roasted peanut oil, creamy peanut butter, rice vinegar, tamari or soy sauce, garlic, and chili flakes until smooth and well combined.
- Serve: Top the rolls with sesame seeds and extra peanuts, then serve warm with the peanut sauce on the side for dipping. For a complete meal, serve with rice on the side.
Notes
- Feel free to adjust the level of chili paste and chili flakes depending on your preferred spice level.
- If you prefer, you can use ground chicken or pork as an alternative to beef.
- For a gluten-free option, ensure youโre using gluten-free tortillas and tamari instead of soy sauce.
