Description

This 20-Minute Udon Noodle Stir Fry with Sausage is a fast, flavor-packed meal featuring chewy udon noodles, smoky sausage, and crisp veggies tossed in a sweet and spicy teriyaki-chili glaze.


Ingredients

  • 12 ounces (340g) merguez sausage, sliced
  • 4 tablespoons cooking oil
  • 5 garlic cloves, thinly sliced
  • 8 ounces (225g) mushrooms, trimmed and halved
  • 2 red bell peppers, cut into large pieces
  • 4 ounces (115g) baby corn, sliced
  • 14 ounces (400g) fresh udon noodles
  • 1/2 cup teriyaki sauce
  • 3 tablespoons chili sauce
  • Salt and black pepper, to taste

Instructions

  1. Heat 2 tablespoons oil in a large skillet or wok over medium-high heat. Add sliced sausage and cook for 3–4 minutes until browned. Remove and set aside.
  2. Add another tablespoon of oil to the same pan. Add garlic, mushrooms, and red bell peppers. Stir fry for 3–4 minutes until slightly tender.
  3. Add baby corn and return sausage to the pan. Stir to combine evenly.
  4. Add udon noodles, teriyaki sauce, and chili sauce. Toss continuously for 2–3 minutes until noodles are coated and heated through.
  5. Season with salt and black pepper to taste. Drizzle with a bit more teriyaki sauce if desired.
  6. Serve hot, garnished with sesame seeds or green onions if preferred.

  • Cook on high heat for best texture and flavor.
  • Loosen pre-cooked udon noodles with a little oil before adding to the pan.
  • Adjust chili sauce based on your spice tolerance.
